Gluten-Free Fish'n'Chips

On an impromptu visit to Cambridge I wondered "are there any GF fish'n'chips shops nearby?"

So a quick search on the internet brought this up....

They apparently do GF ANY day of the week and they fry the GF fish in with the chips, so separate to the normal battered things.

Standard size Cod and Chips (all Gluten Free)!
About £4.95 for the fish, £1.60 for the chips and 50p for Heinz Ketchup.

Gluten Free Vanilla Butterfly Cakes

CUPCAKES - makes 12.
Prep time, less than 10 minutes. Cooking time 18-20 minutes.
Please check your Coeliac UK Food Directory for suitable ingredients.

VANILLA:
150g (5oz) unsalted butter or margarine, softened
150g (5oz) caster sugar
175g (6oz) GF Flour (I use Juvela White Mix)
3 eggs
1 teaspoon of vanilla extract
  • Line a 12 section bun tray with paper cake cases.
  • Put all the ingredients in a mixing bowl and beat with a hand-held electric whisk for 1-2 minutes until the mixture is light and creamy.
  • Divide evenly between the cake cases (I have to get this just right otherwise the mixture is just enough to spill over the edges of those cake cases I put a little too much in!)
  • Bake in a preheated over at 180c (350f) (gas mark 4) for about 18-20 minutes, until firm to the touch (I always check mine by putting a skewer into the middle of some of the cakes, if it comes out clean - they are cooked)
  • Transfer to a wire rack to cool.
  • When cold, cut the middles out of each cake, fill with GF butter cream, then replace the top (sliced in half)

"Sybil's" Syrup Sponge - Gluten Free

Adapted from a recipe from my mother-in-law!

Ingredients:
4 tbsp golden syrup (or more!)
4oz margarine
4oz sugar
2 eggs, beaten
6oz gluten-free flour
2 tspn "powdered" / "ground" ginger
Little milk
(Optional: tin pear halves)

Method:
  • Grease either one large pudding basin or approx 5 ramekins.
  • (optional: put pears halves into the basin or one half per ramekin - flat side on the bottom so the curved side pointed up towards you)
  • Put golden syrup over pears (or straight into greased bowl if not using pears).
  • In a mixing bowl, add sugar and margarine and beat until pale and fluffy.
  • Add the eggs and flour with ginger, alternating between the two and beating after each addition.
  • You want a dropping consistency, so if the mixture is a little thick then add a dessert spoon of milk (one at a time) until you reach a good consistency.
  • Spoon on top of the (pears and) syrup.
  • Put onto a baking sheet (this will catch any syrup that bubbles over) and bake at 180c.
  • After the below time, test with s skewer to see if the sponge is cooked.
Individual ramekins 30-40 minutes
Pudding basin: 45-60 mins

Serve hot on it's own, with extra syrup, ice cream or cream!

These will keep in the fridge for a few days. Simply slice (if using a pudding bowl) or take out of a ramekin, turn onto a plate, add extra syrup if required, and microwave for about a minute.

National Trust Gluten Free Cake!

A Gluten Free Coffee and Walnut Cake, found yesterday in a National Trust cafe!
Not the tastiest of cakes but certainly a much welcomed snack on a nice day out!
